  1. Cook bacon in a large skillet over medium-high until crisp. Transfer bacon to slow cooker.
  2. Season beef with salt and pepper. In the same skillet, sear beef on all sides, 2-3 minutes per side. Transfer beef to slow cooker.
  3. Add red wine to the skillet, scraping brown bits. Simmer to reduce slightly. Add chicken broth, tomato sauce, and soy sauce. Whisk in flour until smooth. Pour sauce into slow cooker.
  4. Add garlic, thyme, carrots, potatoes, and mushrooms to the slow cooker. Stir to combine.
  5. Cook on low 8-10 hours (or high 6 hours) until beef is tender. Garnish with fresh parsley. Serve with mashed potatoes if desired.
