Ingredients
- 5 slices bacon, finely chopped
- 3 pounds boneless beef chuck, cut into 1-inch cubes
- 1 cup red cooking wine
- 2 cups chicken broth
- 1/2 cup tomato sauce
- 1/4 cup soy sauce
- 1/4 cup flour
- 3 garlic cloves, finely chopped
- 2 tablespoons thyme, finely chopped
- 5 medium carrots, sliced
- 1 pound baby potatoes (tri-color if desired)
- 8 ounces fresh mushrooms, sliced
- Fresh chopped parsley, for garnish
- Salt and pepper, to taste (for searing beef)
Directions
- Cook bacon in a large skillet over medium-high until crisp. Transfer bacon to slow cooker.
- Season beef with salt and pepper. In the same skillet, sear beef on all sides, 2-3 minutes per side. Transfer beef to slow cooker.
- Add red wine to the skillet, scraping brown bits. Simmer to reduce slightly. Add chicken broth, tomato sauce, and soy sauce. Whisk in flour until smooth. Pour sauce into slow cooker.
- Add garlic, thyme, carrots, potatoes, and mushrooms to the slow cooker. Stir to combine.
- Cook on low 8-10 hours (or high 6 hours) until beef is tender. Garnish with fresh parsley. Serve with mashed potatoes if desired.
Tips
- Sear beef well for flavor; avoid overcrowding the pan.
- Whisk flour thoroughly into the wine/broth mixture to prevent lumps in the slow cooker.
- If sauce is too thin at the end, remove lid and cook on high briefly; if too thick, add a splash of broth or wine.
Optional Additions
- Add pearl onions for classic bourguignon texture once base instructions are set.
- Finish with a knob of butter or splash of brandy before serving for richness.
